Chef Corso is a classically trained chef, outdoor educator, and the founder of Outdoor Eats, a company dedicated to elevating the outdoor food experience beyond freeze-dried meals and trail bars. Trained at the Culinary Institute of America in Napa Valley and in Northern Italy, Chef Corso combines over 25 years of culinary expertise with a passion for adventure, teaching people how to cook simple, flavorful meals in the outdoors using real ingredients and practical techniques. As the creator and host of the nationally airing TV series Outdoor Eats, he blends food, travel, and the outdoors into a fresh approach to camp cooking that inspires people to eat better wherever their adventures take them. After breakfast at the hotel, we leave Saigon at 7:30 am with a van transfer to a local cafe where riders can enjoy a quick coffee break and set up their bikes.
Our journey begins on tranquil, paved country lanes draped in the cooling shade of ancient coconut groves. Traverse the intricate tapestry of Mekong village backroads, where the landscape unfolds in a vibrant mosaic of emerald rice paddies, exotic dragon fruit orchards, and fragrant flower farms.

After a local lunch, we arrived at a traditional Mekong homestay.

Enjoy a hearty local lunch before a 1-hour comfortable AC transfer to Can Tho.

Prepare for the definitive ascent of our expedition. After a brief transfer,
we hug the dramatic coastline before conquering the legendary Hai Van Pass.
Ascend through the “Ocean Clouds” via majestic switchbacks offering breathtaking panoramas of the East Sea, followed by an exhilarating descent toward a sumptuous seafood luncheon by the shore.
In the afternoon, we transfer to Hue, the ancient capital of the Nguyen Dynasty.
Community Cooking
In the evening, retreat to a hidden garden for a unique Zen vegetarian cooking demonstration. Meet local artisans, marvel at their fruit/vegetable carving skills, and indulge in a delectable, healthy feast.

Journey to a secluded estate for an exclusive farm-to-table experience. Engage in an organic culinary workshop that unveils the refined elegance and intricate spice profiles that defined the legendary royal cuisine of the Nguyen Dynasty.
The afternoon is yours to discover more of this lovely city.
To cap off our adventure, we have a farewell dinner in Hue to say goodbye to the team and our new friends.
